We always use the species Sardina pilchardus in our canned sardine products. This fish belongs to the Clupeidae family. It is easily distinguished by the blueish color of its dorsal area and silver belly. It is a very common species along the Spanish coasts, measuring up to 25 cm (9.8 inches).
It is also the most frequently fished species in the Pacific Ocean in terms of weight.
