It is the most prized and rarest of the tuna species. It has a scaly, oval-shaped body, with a dark blue back and a whitish belly. It is easily recognized by its central fin, which is longer than usual, measuring more than two-thirds of the fish’s total length. The average size is around 75 cm, with a weight of approximately 10 kg. As a migratory species, it is marketed under the names WHITE TUNA or ALBACORE (Thunnus alalunga), depending on the delicate color of its flesh and its geographic origin.
The belly meat, known as ventresca, is especially valued for its delicate flavor and texture.
