The sardine used in our preserves is always the species Sardina pilchardus. This fish that belongs to the family of cupleids. The bluish tone of its dorsals and its silver belly make it easily distinguishable. It is a very common species on the Spanish coasts, measuring 25 cm.

Blue fish par excellence, therefore more fatty, energetic and with more fat-soluble vitamins than white.
