SQUID PROPERTIES
Squid adapts to various and appetizing preparations, being an excellent source of protein.
RAW MATERIAL
One of the cephalopods we work with at Conservas Valcárcel is the squid. These animals have a tube-shaped, elongated body with two triangular fins at their tips. An almost transparent, smooth pink skin covers their bodies. The peculiar calcareous shell it has inside acts as its skeleton. To move around, it pushes pressurized water out of a tube, like a siphon. It can change colors to adapt to the environment and camouflage itself from enemies. If it feels threatened, it squirts a jet of black ink.
Squid is the marine animal with the highest proportion of edible body parts (between 60% and 80%). It can be found in every ocean and sea in the world.
Its ink is used in cooking and to prepare stews.
