SCALLOP PROPERTIES
Like all molluscs, they are highly protein-rich and have a high iron content. This iron content corresponds to up to 4 times the significant reference amount (10 mg in 100g of product), which contributes to normal cognitive function, the process of cell division, as well as reducing tiredness and fatigue, which is why their consumption is recommended in a varied and balanced diet and a healthy lifestyle.
RAW MATERIAL
These bivalve molluscs, which resemble scallops, feed on plankton filtered from the water. Their small size gives them a better taste and texture.
This raw ingredient is served in a scallop sauce, inspired by a very traditional Galician shellfish recipe.
